Banana Blueberry Treats

Ingredients:
- Cooking spray
- 1 medium to large very ripe banana
- 1/3 cup vegetable oil
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- Pinch of salt
- 1/2 heaping cup fresh or frozen (thawed and drained) blueberries
Directions:
- Preheat oven to 400 degrees F.
- Wash hands with warm water and soap, scrubbing for at least 20 seconds.
- Spray a baking sheet with cooking spray or line with parchment paper.
- In a medium bowl, mash the banana. Add the oil, sugar, vanilla, and cinnamon and mix well. Add the rolled oats, flour, and a pinch of salt. Stir until well combined. Fold in the blueberries.
- Drop spoonfuls of mixture onto prepared baking sheet. Bake 11 to 14 mins or until the edges are golden brown.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Store leftovers in an airtight container within 2 hours.
Notes
- These are good for baking in a toaster oven. Watch closely because you may need to reduce the temperature if they brown too quickly.
- This recipe can also be made into bars. Use a 9-inch-by-7-inch pan, pie dish, or 8-inch
square pan or a similarly sized ovenproof skillet. Line with parchment paper and coat with cooking spray. Bake at 375 degrees F for 25 to 30 minutes. - If your banana is not very ripe, try peeling and breaking it into hunks and warming it in the microwave for about 30 seconds to soften before mashing.
- Careful measuring of the flour is important. Be sure to spoon the flour into the measuring cup and level off. Do not scoop directly into the cup.
