Banana Blueberry Treats

Banana Blueberry Treats on cooling rack

Ingredients:

  • Cooking spray
  • 1 medium to large very ripe banana
  • 1/3 cup vegetable oil
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • Pinch of salt
  • 1/2 heaping cup fresh or frozen (thawed and drained) blueberries

Directions:

  1. Preheat oven to 400 degrees F.
  2. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  3. Spray a baking sheet with cooking spray or line with parchment paper.
  4. In a medium bowl, mash the banana. Add the oil, sugar, vanilla, and cinnamon and mix well. Add the rolled oats, flour, and a pinch of salt. Stir until well combined. Fold in the blueberries.
  5. Drop spoonfuls of mixture onto prepared baking sheet. Bake 11 to 14 mins or until the edges are golden brown.
  6. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  7. Store leftovers in an airtight container within 2 hours.

Notes

  • These are good for baking in a toaster oven. Watch closely because you may need to reduce the temperature if they brown too quickly.
  • This recipe can also be made into bars. Use a 9-inch-by-7-inch pan, pie dish, or 8-inch
    square pan or a similarly sized ovenproof skillet. Line with parchment paper and coat with cooking spray. Bake at 375 degrees F for 25 to 30 minutes.
  • If your banana is not very ripe, try peeling and breaking it into hunks and warming it in the microwave for about 30 seconds to soften before mashing.
  • Careful measuring of the flour is important. Be sure to spoon the flour into the measuring cup and level off. Do not scoop directly into the cup.
