Chicken Fajita Salad Recipe

Ingredients:
- 1 pound ground chicken
- Cooking spray
- 3 tablespoons olive oil, divided
- 2 green bell peppers, sliced into thin strips
- 1/2 sweet onion, sliced into thin strips
- 1 can (16 ounces) low-sodium black beans, rinsed and drained
- 1 tablespoon no salt-added-tomato paste
- 1 cup water
- 1 package (1.25 ounces) salt-free fajita or taco seasoning
- 1 bag (9 ounces) romaine lettuce salad mix or 1 large head of romaine lettuce, chopped
- 1/4 teaspoon ground black pepper
- 2 limes, one cut in half for juicing and one cut into quarters for garnish
- 1 medium avocado, diced
- Fresh chopped cilantro for garnish (optional)
Directions:
- Wash hands with warm water and soap, scrubbing for at least 20 seconds.
- Gently clean all the produce under cool running water.
- Lightly coat a large skillet with cooking spray and cook the chicken over medium-high heat for 7 to 10 minutes or until cooked through.
- Push the chicken to the side of the pan and heat 1 tablespoon olive oil.
- Sauté the peppers and onions in the olive oil for 5 to 7 minutes or until they begin to soften. Add the tomato paste and stir well to coat.
- Add the water, drained black beans, and fajita or taco seasoning.
- Stir well to combine and cook 5 more minutes until everything is heated through and most of the water has evaporated.
- While the chicken mixture is finishing, combine the lettuce mix with 2 tablespoons of olive oil, black pepper, and the juice of 1 lime in a large bowl.
- Divide the lettuce mix evenly into six bowls and top each bowl with 1/6 of the chicken mixture (about 2/3 cup).
- Top each bowl with diced avocado and a slice of lime. Garnish with cilantro if desired.
