Chicken Fajita Salad Recipe

Ingredients:

  • 1 pound ground chicken
  • Cooking spray
  • 3 tablespoons olive oil, divided
  • 2 green bell peppers, sliced into thin strips
  • 1/2 sweet onion, sliced into thin strips
  • 1 can (16 ounces) low-sodium black beans, rinsed and drained
  • 1 tablespoon no salt-added-tomato paste
  • 1 cup water
  • 1 package (1.25 ounces) salt-free fajita or taco seasoning
  • 1 bag (9 ounces) romaine lettuce salad mix or 1 large head of romaine lettuce, chopped
  • 1/4 teaspoon ground black pepper
  • 2 limes, one cut in half for juicing and one cut into quarters for garnish
  • 1 medium avocado, diced
  • Fresh chopped cilantro for garnish (optional)

Directions:

  1. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  2. Gently clean all the produce under cool running water.
  3. Lightly coat a large skillet with cooking spray and cook the chicken over medium-high heat for 7 to 10 minutes or until cooked through.
  4. Push the chicken to the side of the pan and heat 1 tablespoon olive oil.
  5. Sauté the peppers and onions in the olive oil for 5 to 7 minutes or until  they begin to soften. Add the tomato paste and stir well to coat.
  6. Add the water, drained black beans, and fajita or taco seasoning.
  7. Stir well to combine and cook 5 more minutes until everything is heated through and most of the water has evaporated.
  8. While the chicken mixture is finishing, combine the lettuce mix with 2 tablespoons of olive oil, black pepper, and the juice of 1 lime in a large bowl.
  9. Divide the lettuce mix evenly into six bowls and top each bowl with 1/6 of the chicken mixture (about 2/3 cup).
  10. Top each bowl with diced avocado and a slice of lime. Garnish with cilantro if desired.
