How to Cook Lentils and Peas From Scratch

Ingredients:
- Lentils or Peas
Directions:
- Wash hands with warm water and soap for 20 seconds.
- Sort and rinse dried lentils, split peas, or black-eyed peas with water to remove debris and dirt.
- Remember, there is no need to soak lentils, split peas, or black-eyed peas.
- Combine lentils or split peas and unsalted water in a pot large enough to accommodate them doubling or tripling in size.
a. For every cup of lentils, use 2.5 cups of water.
b. For every cup of split peas, use 2 cups of water. - Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer.
a. Most types of lentils need to simmer for 20 to 40 minutes until tender. Some types of lentils (like split red lentils) only take 5 to 10 minutes. Be sure to check the package directions for the suggested cooking times for the type you are using.
b. If you’re cooking split peas, simmer for about 30 minutes. - If you desire, season with salt, herbs, and/or seasonings after cooking. Do not add salt before cooking because this will toughen the lentils or split peas.
- Store cooked lentils in the refrigerator within 2 hours and use within 4 days. You can also freeze them and use within three months. Use airtight containers for storing leftovers.
