Down-Home Honey Cornbread Muffins

Ingredients:

  • 1 cup yellow or white cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup sugar
  • 1 cup lowfat milk
  • 2 eggs
  • 4 tablespoons melted unsalted butter
  • ¼ cup honey

Directions:

  1. Wash hands.
  2. Preheat oven to 400 degrees F.
  3. Line 12 cups in a muffin tin with paper liners.
  4. Place cornmeal, flour, baking powder, salt, and sugar in a large bowl. Stir to combine.
  5. Combine milk, eggs, melted butter, and honey in another bowl. Whisk until combined.
  6. Add the dry to the wet ingredients, and stir just until mixed.
  7. Spoon batter into the prepared muffin pan.
  8. Bake 15 minutes, until golden brown or until an inserted toothpick comes out clean.
  9. Store leftovers in an airtight container.

Notes

Try making this recipe in a skillet with cooking spray-­spoon out portions like you would pancakes, brown on each side.
