Down-Home Honey Cornbread Muffins

Ingredients:
- 1 cup yellow or white cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup sugar
- 1 cup lowfat milk
- 2 eggs
- 4 tablespoons melted unsalted butter
- ¼ cup honey
Directions:
- Wash hands.
- Preheat oven to 400 degrees F.
- Line 12 cups in a muffin tin with paper liners.
- Place cornmeal, flour, baking powder, salt, and sugar in a large bowl. Stir to combine.
- Combine milk, eggs, melted butter, and honey in another bowl. Whisk until combined.
- Add the dry to the wet ingredients, and stir just until mixed.
- Spoon batter into the prepared muffin pan.
- Bake 15 minutes, until golden brown or until an inserted toothpick comes out clean.
- Store leftovers in an airtight container.
Notes
Try making this recipe in a skillet with cooking spray-spoon out portions like you would pancakes, brown on each side.
