Festive Honey-Butter Corn

Ingredients:
- 1 tablespoon unsalted butter
- 1 tablespoon honey
- 2 cups fresh corn kernels
- 1 medium green or red bell pepper, diced
- 2 ounces Neufchatel cream cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Directions:
- Wash hands with soap and warm water.
- Heat a large skillet over medium heat.
- Add the butter and honey to the skillet and allow the butter to melt.
- Add the corn and bell pepper and saute about 8 to 12 minutes, stirring occasionally.
- Once the vegetables are tender, add the Neufchatel cream cheese, salt, and pepper. Stir until cheese is melted and creamy. Serve immediately.
- Refrigerate leftovers within 2 hours.
Notes
A 16-ounce bag of frozen corn kernels can be substituted for fresh corn.
