Festive Honey-Butter Corn

Honey-Butter Corn

Ingredients:

  • 1 tablespoon unsalted butter
  • 1 tablespoon honey
  • 2 cups fresh corn kernels
  • 1 medium green or red bell pepper, diced
  • 2 ounces Neufchatel cream cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Directions:

  1. Wash hands with soap and warm water.
  2. Heat a large skillet over medium heat.
  3. Add the butter and honey to the skillet and allow the butter to melt.
  4. Add the corn and bell pepper and saute about 8 to 12 minutes, stirring occasionally.
  5. Once the vegetables are tender, add the Neufchatel cream cheese, salt, and pepper. Stir until cheese is melted and creamy. Serve immediately.
  6. Refrigerate leftovers within 2 hours.

Notes

A 16-ounce bag of frozen corn kernels can be substituted for fresh corn.
