Fresh Carrot Slaw

Fresh carrot slaw

This carrot slaw is crunchy and sweet. Great as a snack, lunch, or dinner. Serve with crusty bread or as a healthy side to sandwiches or burgers.

Ingredients:

  • 2 cups shredded carrots
  • ½ cup raisins
  • ⅛ cup light mayonnaise
  • ⅛ cup plain yogurt

Directions:

  1. Mix carrots, raisins and mayonnaise together and serve.
  2. For best results, chill for one hour before serving.
