Fruit and Spinach Salad with Honey Mustard Vinaigrette

Ingredients:

  • *1/4 cup olive oil
  • *1/4 cup apple cider vinegar
  • *1/4 cup yellow mustard
  • *1/4 cup honey
  • 10 ounces baby spinach
  • 1 apple
  • 1/2 small red onion
  • 1/3 cup coarsely chopped nuts (almonds, pecans, walnuts, etc.)
  • 1/4 cup dried cranberries or raisins
  • 1/2 cup reduced-fat shredded cheddar cheese

Directions:

  1. Wash produce under cool running water. Scrub apple with a produce brush to clean. Dry.
  2. In a large bowl, place spinach in the bottom.
  3. Core and dice apple.
  4. Remove skin of onion, slice thinly into rings.
  5. Coarsely chop nuts.
  6. On top of spinach, layer apples, onion, nuts, dried cranberries, and cheese.
  7. *In a separate small bowl, whisk together salad dressing ingredients.
  8. Drizzle salad dressing over salad mixture and toss.Serve immediately. Or serve the dressing on the side.
  9. Refrigerate leftovers within 2 hours.
