HCEB Broccoli Salad

Ingredients:

  • 6 cups broccoli, chopped
  • 1 cup raisins
  • 1 medium red onion, diced
  • 2 tablespoons sugar
  • 8 reduced-sodium turkey bacon slices, cooked and crumbled
  • 2 tablespoons lemon juice
  • 3/4 cup plain non-fat Greek yogurt

Directions:

  1. Combine all ingredients in a medium bowl, mix well.
  2. Chill for 1 to 2 hours.

Make it a Meal

Pair this salad with a BBQ sandwich on whole wheat bread, apple sauce, and milk.
