Mediterranean Salad

Ingredients:
- 1 large head romaine lettuce, chopped
- ½ medium red onion, diced
- 1 (15 ounce) can no-salt-added chickpeas, drained and rinsed
- 1 large green bell pepper, diced
- 1 pint grape tomatoes
- 1 medium cucumber, sliced
- 4 ounces reduced-fat feta cheese, crumbled
- ¼ cup whole black olives, pitted
Directions:
- In a Mason jar (or small bowl), combine dressing ingredients. Tightly screw onthe lid and shake to combine.
- In a large bowl, combine salad ingredients and toss with prepared dressing.
Dressing ingredients:
- ¼ cup olive oil
- 3 tablespoons red wine vinegar
- ½ teaspoon Dijon mustard
- 2 teaspoons garlic, minced
- 1 teaspoon dried oregano
- salt and pepper to taste
