Melon Salsa

Ingredients:
- 2 cups melon, honeydew, cantaloupe or watermelon, seeded and diced
- 1 cup cucumber, peeled, seeded and diced
- 1/4 cup onion, diced
- 2 tablespoons fresh cilantro, parsley or mint, minced
- 1 jalapeno, seeded and minced
- 1/4 cup lime or lemon juice
- 1 tablespoon sugar
Directions:
- In a medium-sized bowl, stir together all ingredients.
- Taste and season with more lemon or lime juice, and sugar if needed.
- Cover and chill for at least 30 minutes.
- Serve with grilled or broiled fish or chicken or with whole-grain tortilla chips.
Make it a Meal
Pair this salsa with grilled fish, quinoa, steamed cauliflower and milk.
