Microwave Scrambled Eggs

Microwaved Scrambled Eggs

Ingredients:

  • 4 large eggs
  • ¼ cup lowfat milk
  • Dash salt
  • Dash pepper
  • ¼ cup shredded reducedfat cheddar cheese

Directions:

  1. Wash your hands with warm water and soap, scrubbing for 20 seconds.
  2. Crack eggs into a microwave-­safe bowl.
  3. Rewash hands after handling raw eggs.
  4. Add milk, salt, and pepper, and whisk.
  5. Place bowl in the microwave and cook on high for 30 seconds. Remove bowl and stir eggs breaking up the cooked pieces. Repeat, stirring every 30 seconds for up to 2 1/2 minutes, until reaching the desired consistency.
  6. Sprinkle with shredded cheese and cover with a plate or towel to allow the cheese to melt.
  7. Serve immediately.
  8.  Refrigerate leftovers within 2 hours.
