Mini Pepper and Cucumber Bites

Plate of Mini Pepper and Cucumber Bites

Ingredients:

  • 8 mini sweet peppers
  • 1 cucumber
  • 4 ounces low-fat cream cheese, softened
  • 1/3 cup plain, nonfat Greek yogurt
  • 2 tablespoons everything bagel seasoning, divided

Directions:

  1. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  2. Wash mini peppers and cucumber under cool running water, using a vegetable brush to scrub the surface.
  3. Cut the mini peppers and cucumbers in half and scoop out any seeds.
  4. In a small bowl, mix the softened cream cheese, Greek yogurt, and 1/2 tablespoon of everything bagel seasoning.
  5. Spread the cheese mixture into the peppers and cucumber, sprinkle with the remaining everything bagel seasoning and cut into bite-size pieces. Serve and enjoy.
  6. Refrigerate leftovers within 2 hours.
