Pasta with Steak and Spinach

Ingredients:

  • 1 tablespoon Italian seasoning
  • 2 tablespoons garlic powder, divided
  • 2 teaspoons salt, divided
  • 1 teaspoon ground black pepper
  • 1 pound sliced or shaved lean steak (sirloin, sizzle, etc.)
  • 1 box (16 ounces) whole-wheat penne pasta
  • 1 cup reserved pasta water
  • 1/3 cup olive oil plus 1 tablespoon, divided
  • 1 large onion, sliced into strips
  • 2 red or green bell peppers, sliced into strips
  • 3 tablespoons balsamic or red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 1/2 tablespoons dried basil
  • 3 cups fresh spinach, roughly chopped
  • 1/2 cup Parmesan cheese or crumbled feta, optional

Directions:

  1. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  2. In a small bowl, combine the Italian seasoning,1 tablespoon garlic powder, 1 teaspoon of salt, and pepper. Season the steak on all sides with the mixture and set aside. Wash hands with warm water and soap after handling raw meat.
  3. Bring a large pot of water to a boil and cook the pasta according to package directions. Reserve 1 cup of the starchy water before draining the pasta.
  4. While the pasta is cooking, heat 1 tablespoon of olive oil in a large pan over medium heat. Add sliced onions and peppers; cook until tender, about 5 minutes.
  5. Add the steak slices to the pan with the onions and peppers. Cook the steak for 5 to 7 minutes, stirring often until it reaches a minimum of 145 degrees F as measured on a meat thermometer. Remove from heat to rest until the pasta is done.
  6. In a small bowl, whisk together 1/3 cup of olive oil, vinegar, mustard, 1 tablespoon garlic powder, 1 teaspoon of salt, and basil.
  7. Drain the cooked pasta and put it back in the pot along with the reserved pasta water, steak, vegetables, dressing, and spinach. Toss it all together. As you toss it, the spinach will wilt.
  8. Garnish with cheese, if using, and serve.
  9. Refrigerate leftovers within 2 hours.
