Southwestern Vegetable Salad

  • 1 cup cucumber, diced
  • 1 cup frozen corn, thawed
  • 1 14.5-ounce can diced no salt added tomatoes with chili pepper
  • 1/4 cup bell pepper, diced
  • 2 tablespoons vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon dried cilantro (optional)


  1. In a medium mixing bowl, combine ingredients and mix well.
  2. Chill and serve cold.

Make it a Meal

Pair this salad with a ham and cheddar cheese wrap on whole wheat tortilla, banana and water.
