Southwestern Vegetable Salad

Ingredients:
- 1 cup cucumber, diced
- 1 cup frozen corn, thawed
- 1 14.5-ounce can diced no salt added tomatoes with chili pepper
- 1/4 cup bell pepper, diced
- 2 tablespoons vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/8 teaspoon black pepper
- 1/4 teaspoon dried cilantro (optional)
Directions:
- In a medium mixing bowl, combine ingredients and mix well.
- Chill and serve cold.
Make it a Meal
Pair this salad with a ham and cheddar cheese wrap on whole wheat tortilla, banana and water.
