Caramelized Banana Toast

Ingredients:

  • 1/4 tablespoon butter or oil
  • 1/2 tablespoon honey
  • Dash of cinnamon (optional)
  • 1 large banana, peeled and sliced
  • 2 slices whole-wheat bread
  • 2 tablespoons peanut butter, or nut butter of choice

Directions:

  1. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  2. Over medium heat, add butter or oil to a small nonstick pan. Once butter is melted, add honey and cinnamon. Stir to combine.
  3. Add banana slices to the pan, leaving space between each slice. Let bananas cook for 2 to 4 minutes.
  4. While the bananas cook, toast the slices of bread.
  5. Using a small spatula, gently lift a banana slice to see if it has browned. Once browned, flip to cook the other side for another 2 to 4 minutes. Remove from heat.
  6. Spread each slice of toast with peanut butter then layer banana slices across each slice. Be careful handling banana slices, they will be very hot.
  7. If desired, sprinkle with cinnamon and drizzle lightly with honey. Enjoy!
  8. Store leftovers in the refrigerator within 2 hours.
