Soft Sugar Squash

A traditional dish from Somalia.
Ingredients:
- 1 large butternut squash (about 1 pound), cubed and peeled
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons olive oil
Directions:
- Wash hands with warm water and soap, scrubbing at least 20 seconds.
- Fill a 9.5-quart pot halfway with water and bring to a boil.
- Add the squash and salt. Cook until tender, about 10 minutes.
- Drain the water and combine the cooked squash with sugar and olive oil. Gently combine.
- Serve.
