Soft Sugar Squash

A traditional dish from Somalia.

Ingredients:

  • 1 large butternut squash (about 1 pound), cubed and peeled
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons olive oil

Directions:

  1. Wash hands with warm water and soap, scrubbing at least 20 seconds.
  2. Fill a 9.5-quart pot halfway with water and bring to a boil.
  3. Add the squash and salt. Cook until tender, about 10 minutes.
  4. Drain the water and combine the cooked squash with sugar and olive oil. Gently combine.
  5. Serve.
